We love experimenting with new ingredients for our smoothies so we landed on carrots! More often used in salads or roasts, carrots aren't what you think of when prepping your morning smoothie but we've tried the recipes below and love them! We think you will too :)! We like shredding our carrots before blending so we'll usually shred in batches and then freeze what we don't use for next time. Also, feel free to add a scoop of chia, flax or hemp seeds to any of these for that extra protein!
1. Mango Carrot Smoothie
- Orange juice (we also tested with unsweetened almond milk!)
- 1 part shredded carrot
- 1 part frozen mango chunks
- 1 part banana
2. Green Carrot Smoothie
- Coconut water
- 1 part shredded carrot
- 1 part strawberry
- 1 part pineapple
- 1/2 part frozen spinach
3. Apple Carrot Smoothie
- Water (or your favorite non-dairy milk for a creamier texture)
- 1 part shredded carrot
- 1 part apple chunks
- 1/4 part shredded ginger
- Generous squeeze of lemon juice
4. Creamy Carrot Smoothie
- Oat milk
- 1 part shredded carrot
- 1 part banana
- 1/3 part prunes
- 1/4 part walnuts
- 1/2 teaspoon of cinnamon
- 1/4 teaspoon of nutmeg
5. Carrot Cake Smoothie (we end with some dessert!)
- Unsweetened vanilla cashew milk
- 1 part shredded carrots
- 1/2 part banana
- Scoop of plain Greek yogurt
- 1 tablespoon of walnuts
- 1 tablespoon of coconut flakes
- 1 teaspoon of cinnamon
- Pinch of ground nutmeg
